Spaghetti Aglio e Olio. 12 cloves of garlic (yes, I LOVE garlic!), red pepper flakes, fresh parsley, angel hair pasta, shaved fresh parmesan, a few lemon squeezes, and diced artichoke hearts.

Fish n chips. I made tartar sauce last night. The other night I had nearly over-ripe tomatoes diced and marinating in a bowel with smashed garlic, olive oil, a little red wine vinegar, salt, pepper, red pepper flakes and a pinch of basil. Later I removed the garlic and tossed with hot spaghetti. It was delicious.

Just got in the house after spending a few hours gardening. We are going to pick up a load of mulch in the morning and wanted to get the garden beds cleaned out of old leaves and weeds.

Don’t feel like cooking now so took some roast turkey, cornbread dressing, and gravy out of the freezer and will heat it and serve it with a salad.

I often make entrees and freeze them in rectangular glass covered dishes for nights when cooking isn’t appealing and we don’t feel like going out.

Was going to have leftover Chicken in Pestp Ranch sauce covered in Mozzarella well some sautéed spinach on the side, but it got to being late and I didn't want to consume that many calories (I limit myself to 2000/day to maintain my ideal weight of 150). So, wanting something hearty I opted to make a big bowl of oatmeal with cinnamon sprinkled on top and a protein shake.

I spent most of my afternoon today making gallons of chicken stock. I freeze it by the quart and a batch usually lasts me a couple months.

Tonight I made myself a couple portions of simple chicken soup with a grilled cheese. Into some homemade stock goes a little leftover dark meat from last night’s dinner, a couple sliced carrots and rib of celery, some Manischewitz egg noodles, and lots of chopped fresh dill. 🥣🤗

You can stir fry any frozen vegetable. Heat skillet, tablespoon of oil or so,dash salt, MSG (yes it’s not poisonous); pepper. I usually throw bag of veg overnight to thaw but you don’t have to. Add to hot skillet.and shake and stir til tender.

I picked up a rotisserie chicken when I went out to get the car washed earlier. I'm going to shred it up and make quesadillas for dinner tonight and chicken salad for tomorrow. Homemade chicken salad on a croissant from The Fresh Market. I find The Fresh Market's croissants to be the best grocery store croissants.

I've been using the Pioneer Woman's chicken salad recipe for years, it's really good, includes grapes. Although, I don't particularly like her.

Dessert will be a couple of mochi ice cream balls.

I eat soup in a soup mug. The handle makes it easier especially if I'm not sitting at the table to eat.

I wasn't feeling well a while back and heated up some Italian Wedding Soup and I knew I wouldn't want to keep getting up from my cocoon of warm blankets to get seconds, so I poured it into a 4-cup measuring cup. The size plus the handle on the measuring cup were ideal for my situation!

r67, well I didn't fill it up to the top, maybe halfway so 2 to 2 1/2 cups of soup in a 4-cup Pyrex measuring cup. Plenty of room for oyster crackers and no splashing or spilling as there was plenty of room at the top. It was a great fix for sitting on the couch and not making a mess.

Cuban Chili ,my old recipe that I developed. I cut up 1 lb of thawed frozen yucca into 1-in squares and pan fry it like hash browns, I add a 1 lb package of mixed peppers and onions and saute till brown , brown 1lb of lean ground turkey and dump this insta pot with can of black beans,can of garbanzos,2 cans of whole tomatoes and one bottle of corona. Pressure cook for 20 minutes, allow pressure to drop on its own.

r98, it really is insanely good, $12-14 depending on where you buy it. Best prepared in oven not microwave.

It is available at Publix, Target, Costco, The Fresh Market, Sprouts and Whole Foods.

The recipe is on their website and their "flagship" cheese (pricey) is also available for purchase. I did purchase the cheese years ago and made it myself and it was great but I'm just too lazy now and buy the frozen one. I find it to be well worth the price.

The retiree at the deli counter seemed put out by my asking for the corned beef to be "shaved". They offer shaved, very thin, thin, sandwich cut and dinner cut options. They shouldn't offer the "shaved" option if it's going to result in the customer getting side eye from the employee.

Looks delicious, R104! Two Fridays ago I used Israeli pearl couscous for the first time, in a fresh, bright Louisiana shrimp saute with multicolor mini-tomatoes and multicolor mini bell peppers and tons of shaved garlic.

Tonight I'm still nursing a torn hamstring and screechingly painful trigger finger (rt ring finger that I haven't been able to open/extend in 36 hrs), so cooking is not an option. So I DoorDashed canned tuna and a 4-pack of croissants from Albertsons, and made tuna salad. Letting the seasonings meld. Will have tuna on croissant with fresh tomato slice, low-sodium Lay's potato chips. In the mood for cabernet, or a Myers rum and Diet Pepsi.

Chili bean soup using bulk pork sausage

I added in fish sauce for some bass. I also browned my tomato paste because that’s what the internets told me to do. I also tried oven roasted garlic paste from a tube (should have stuck with minced fresh garlic).

I wanted to omit the Knorr chili spice packet to avoid over salting and salt wasn’t an issue. Instead, I went a little nuts with different pepper spices that increased the heat. Next time, I’ll measure out the chili, cumin, and cayenne pepper instead of pretending I know what a teaspoon/tablespoon measurement looks like.

Tonight I got a buffalo ranch chicken sandwich from Chili's. I'm sure it will be fine, but they really didn't follow through on the "fully dressed" part. It has a little bit of shredded lettuce and some kind of white sauce, which could be ranch, mayo, or cum.

I took a square of lasagne out of the freezer this morning. When I make lasagne I freeze it in individual portions since I'm single, live alone and my dachshunds don't care for it.

I'll be having a John Soules Southern Style Chicken Breast sandwich prepared in the air fryer and topped with Great Value Chicken Dipping Sauce (formerly known as "Special Sauce" but apparently McDonald's had an issue with that so they had to rename it).

Both dupes for CFA chicken sandwich and sauce without having to patronize CFA. Take that CFA!

It is a nicely flavored chicken breast and not pressed and the bun that comes with it is good unlike the bun Tyson's includes with their bland sandwiches. I microwave the bun separately rather than air fry as instructed as I like soft bun.  Photo below.

Chicken salad with a salad - good tomatoes this week, and Wegman’s chocolate ice cream (which at $3.50 for 1.5 qts is $1.17 a pint.) Think about that if you’re near a Wegman’s and can eat dairy. It’s so good and so cheap. The vanilla is shit and the peach crumble pie flavor sucked, but the chocolate’s perfect.

I baked a 1 lb salmon fillet that I got for 30% off at Aldi's! Seasoned with a Mediterranean spice mix. This will be two portions that I will save one for later. I made brown rice with the same Mediterranean seasoning with a mixture of carrot juice, water and EVOO . One bag of microwave steam mixed veggies from Aldi. Very healthy and delicious! Curiously my Siamese Trixie will not touch fish but loves the brown rice.

r104, I made that recipe and mostly loved it, but husband and I thought it was too greasy, and he thought it was way too sweet. We will try it again with less of the dressing, and with a less sugary balsamic vinegar brand, or perhaps we'll use red wine vinegar. Otherwise, this is a keeper. Thank you! We actually have Haloumi cheese in the fridge (I'm Greek and Easter is this Sunday) but we didn't use it as a side dish. The fresh basil really sets this recipe off well.

I've made a dozen or two recipes taken from the DL over the years. Some of them were simply links to Ina or Chef John. Fabulous.

I had a poverty pantry clearer tonight - lentil soup made with boxed broth, tinned diced tomato, tinned white beans. Only fresh ingredients were onion, garlic, some sad looking courgettes, and a Polish sausage also nearing expiry. I gave the pot a slurp of vinegar and a glass of my Shiraz (rather than drink the entire bottle).

I’ve lots of leftovers which won’t keep particularly well. I’ll have a bowl or two tomorrow and then probably waste the rest. I can probably make a dinner tomorrow of a bowl of soup with a roasted chicken leg or fillet of turbot.

I made fish tacos with Gorton's Fish Sticks.

America's Test Kitchen said Gorton's were the best fish sticks and I concur. The whole filet fish sticks tied for winner with the minced fish sticks in their taste test. I got the whole filet ones.

Indeed, R219! Perhaps you’ve found it at Trader Joe’s as I did… lovely, light, complex and unique. It’s wonderful on corn - whether on the cob or freshly popped - with copious amounts of butter. It’s similar to paprika in that it can add a depth to any number of dishes and pairs especially well with white fish, especially if grilled/charred.

I got 3 wheat tortillas and I sandwiched between them some smoked ham and cheese and put them in the airfryer. Then I took them out and laddled some guac and cut up cherry tomatoes on top. It was good but would have been better if I let the tortillas crisp up even more. Also I had no hot sauce or even pepper for heat. But if I make those tweeks I'm definitely making them again.

I also made a simple salad of garbanzo beans, lemon juice, garlic, and olive oil. Very good but didn't finish it because I'm scarred it will make me too gassy.

Made easy chicken pot pie filling and served it over Pillsbury Southern Style Buttermilk Biscuits..

Filling:

Springer Mountain Farms pre-cooked, oven roasted chicken breast strips (I cut them up with kitchen shears into smaller pieces), one can cream of chicken soup, one bag thawed frozen mixed vegetables, a splash of milk, some seasoning (I like herbs de provence), mix together, bake 20-25 minutes serve over them Pillsbury open face biscuits. Somewhat trashy, mighty comforting and filling.

I usually use rotisserie chicken but stocked up on the Springer Farms chicken strips when they were on sale intending to use them for burritos which so far hasn't happened.

Going to roast a free-range, organic chicken tomorrow with rosemary, garlic cloves, and lemons, Ina Garten style. Also, tiny Yukon Gold potatoes with olive oil, S&P, rosemary, then tossed with lemon juice. Steamed green beans -- tossed with -- you guessed it -- olive oil, salt, and lemon juice. Instant Graxy from a powdered Lowrey's or McCormick's mix because making graxy is a pain in the ass. Lemon Pudding Cakes (it's a major hassle - kinda like a souffle) in ramekins for dessert. My neighbor's prolific Meyer lemon tree is spilling lemons into my yard. Gotta use them before the rats get to them.

Another neighbor has an overgrown rosemary bush in their front yard, from which I trim for cooking. Have left them trays of oatmeal raisin cookies at their doorstep for >30 years with my email address, but they've never responded. I think they might be in their 90s by now.

There's a huge difference in flavor and texture from a free-range chicken and a factory-farmed one. The price difference is well worth it. Will likely stuff the bird with sauteed onions, shrooms, celery, and Stove Top stuffing mix, with half the mix cooked on the side in foil. My partner usually does all of the cooking, but likes this meal when I do it maybe 3 times a year. Leftovers are used to make Avgolemono soup.

R274 and R275 have me scratching my head.

R274 why go to the trouble of assembling chicken pot pie from packaged food rather than just buying a frozen one?

R275 you’re doing all that, plus shelling out for a free range chicken but are then going to use powdered gravy mix? Gravy literally takes three minutes to make from scratch. I can overlook the Stove Top stuffing but instant gravy is gross.

r276, I don't know how to make gravy. Something about pan drippings, separating the fat, scrapping up the bits, making a rue, and then cooking the mess over the stove in the original pan and then straining it. Seems like too much work after I've slaved in the kitchen all evening and am on my third glass of wine. Any suggestions? Can't tolerate chicken without gravy (aka "graxy" for Datalounge Eldergays).

Homemade Chile Rellenos.

I could eat these every day, if not for the prep work of roasting and peeling the delicate poblano pepper. I have discovered a better way to keep them intact: instead of slicing an opening in the body, I cut around the stem, pull it and the seeds out, and then stuff the pepper through that opening.

I sautéed a red onion, tossed in thinly sliced pork tenderloin, about 1/2 tablespoon of curry powder, a whole bottle of Trader Joe's red Thai curry sauce, one can of coconut milk, added frozen peas the last 5 minutes, served with basmati rice.

r279 I like to simmer vegetables like onion, celery, carrot etc. in chicken stock, then I puree it all together with an immersion blender and simmer it down to the right thickness, but not too much or it will get gritty. I also add some anchovies, tomato paste, and soy sauce to amp up the umami. If it's for post roast I'll replace a cup of stock with red wine. I find the flour in the roux dulls the flavor and I have to add a bunch of salt to compensate.

In my continued quest to eat healthier, I've been ordering salmon dishes at restaurants. (I refuse to cook it in my place because I hate the smell.) The Tequila Sunburn Glazed Salmon from Bahama Breeze is not bad and is tonight's dinner. I usually hate fish, but this is not too fishy. Pricey, though, but I had a gift card.

Today I did yet another Ina's roast chicken, this time stuffed with lemons, rosemary, and garlic. I "cheated" by using liberal sprinklings of Cavendar's Greek Seasoning -- which is laden with MSG. Again, used a Rocky free-range, organic chicken, well worth the $14. Sent plates of this wonderful chicken to two neighbors, both having health issues, with steamed string beans and tiny roasted Yukon Gold potatoes roasted with rosemary, then tossed with lemon juice, olive oil, and S&P. This is Greek comfort food. Made Cornbread muffins with a box of Jiffy mix spiked with a half can of creamed corn, and an extra egg.

Partner is having a bout with diverticulitis and is on a low-residue diet.. The goal was to make him Avgoloemono soup, but without the shredded chicken. Made stock from the carcass and bones with mire poix, chopped leeks, dill, and pepper corns; then after straining it, and cooking Arborio rice back in the broth, tempered a bowl of egg yolks, with lemon juice and cornstarch into it. We had extra shredded chicken and 7 egg whites, which my partner froze (separately). Not sure what to do with either of them.

Store-bought rotisserie chicken sandwich - several large chunks of white meat on top of half a teeny tiny smashed avocado and slices of very ripe kumato tomatoes, all on TJ's many seed wheat bread (really LOVE that bread!).

AND a Mt. Olive baby dill to go with it. It really hit the spot.
